  • Boil the potatoes at least a few hours before parathas are made. Mashed in a large bowl and cover.
  • Add onions, coriander leaves, salt, garam masala powder, and red chilli powder to the mashed potatoes and mix thoroughly to prevent lumps.
  • Put the wheat flour in a large mixing bowl to make the dough. Add water gradually and knead it until it is soft.
  • Roll out the dough into 3-4 inch circles by dividing it into small-medium balls.
  • Fill the centre with potato filling.
  • Then roll them into round parathas with a rolling pin.
  • On a hot iron tawa, roast the parathas with ghee, flipping them over and cooking on both sides.
  • If you prefer, you can serve aloo parathas with soup, light gravy, pickles, or chilled yoghurt.
